Removed the default stack from environments and web image

Merlin Tribukait stripped the default stack configuration from the environments and web image in the docksal-catalog repository.

The change to erik-seifert/docksal-catalog [1] removed hardcoded default stack settings that had been baked into the environment and web image definitions, likely to make the catalog more flexible or to push that configuration elsewhere in the setup process.
